Late Winter Nature and Food Forage with Jesper

This walk is the perfect remedy for the blues of winter. Following months of cold and dark, winter is finally coming towards its end, and whilst nature isn’t yet in the full bloom of spring, if you know where to look there are some remarkable, beautiful, and edible delights to be discovered. Edible roots, hardy greens, and even a few species of fungi are on the agenda for this hunt through Fletcher Moss Park and its surrounds. The walk will last about two and a half hours and will be capped off with some wild food sampling.

Join our resident Masterchef finalist for this exciting new cooking session where you will learn how to make Indonesian warm salad with peanut sauce (Gado gado), Classic Indo-Malay egg fried rice (Nasi goreng) and Vegetarian adaptation of Malaysian nooodle soup (Laksa).
If you enjoyed her Asian Vegetarian Cuisine and Thai Street Food, you’re bound to love this one too!
Jackie Kearney is a top 4 finalist in BBC One’s MasterChef 2011. She is now developing her experience and reputation with pop-up dining events, as a private chef and working with a number of highly regarded chefs in the UK.
Her food passion lies with vegetarian dining and Asian street food, inspired by her extensive travels across Asia with her husband and twin children. You can read more about Jackie’s adventures with her family on her Asia travel blog.

Due to popular demand, Harjinder is here again with a new meat and fish cooking session, ‘Desi Punjabi Khanna’ – ‘Tasty Home-cooked Food’!
Cracking Cook Harjinder, who has been cooking Punjabi food for 40 years and has been on TV with the Hairy Bikers on their well known Mum Knows Best series, will share her secrets of this delicious cuisine with Varreh (lamb kebabs), Tandoori machi (tandoori fish), Mooli raita, Achari murghi (Chicken and lemon pickle curry) with a demonstration of hot-off-the-tava rotis by Harjinder
Harjinder will be appearing on the Hairy Bikers’ Christmas Special on 20th December at 8pm on BBC1!

Perfect Pastry with Kim

Kim from Islington Mill Cafe will guide you through the various stages of pastry-making in this popular session, and you will learn the art of making perfect shortcrust pastry from scratch and master the skill of handling the sometimes tricky filo and puff pastries. Once you’ve nailed the perfect pie base, you’ll then use seasonal ingredients to create delicious caramelised onion tartlets, a tasty new potato, goats cheese & leek quiche and a roasted spinach strudel.

Woods and hedgerows come to life with patches of fresh green growth and this walk is the perfect opportunity to decipher what can and can’t be eaten, and to learn how to differentiate the toxic from the delicious. With luck, some of Spring’s tastiest edible mushrooms will be on the agenda too. This walk will last up to 3 hours and will be followed by an al fresco cooking experience of our best finds.

This year Cracking Good Food will be returning to the Chorlton’s Big Green Festival for the 3rd time, thanks to everyone who voted for us at Manchester City Council’s U Decide scheme! We successfully came 1st out of 13 fantastic projects in our bid for funding to be able run another Cooks On The Hop event at Chorlton’s Big Green Festival on 31 March 2012.
Our Cracking Cook Rob (our expert breadmaker), will give inspiring tuition in how to cook up wonderful gourmet stone oven baked Pizzas (look out for his secret tomato sauce recipe) under the wooden gazebo, learn how to make dough easily which you can then transform with your chosen toppings into your personalised veggy pizza by popping it into the wood fired oven. And all this will be done in collaboration with Mark and Graham at Stretford Pizza Ovens. 4 sessions will be available, with 8 people in each, running for 45 minutes and then you get to eat what you’ve made!
THIS IS A PUBLIC EVENT, we are offering half of all places as pre-bookable via our website and half will be available to book with us on the day. Each session costs £6.00. As a result of our funding from U-Decide we are able to provide half of all sessions FREE to those who are currently unemployed / students in full time education or people who are over 65 years of age. We will require proof that you are eligible for a concession so please e-mail fiona@crackinggoodfood.org to state what your concessionary status is and bring proof with you on the day.
Chorlton’s Big Green Festival puts sustainability centre stage with a vibrant mix of live music and dance, food and drink, arts and swaps, and much more. There are also plenty of opportunities for festival-goers to get hands-on with practical workshops, a bike parade and a huge ceilidh. Best of all, entry to the festival is completely free! Late Spring Food-For-Free Event with Jesper

Late spring offers some of the broadest and most enjoyable wild food hunting of the year. Tender greens and shoots are still readily available along with the first flowering edibles, and an increasing number of edible mushrooms can be expected if the weather hasn’t been too dry. This is definitely a walk for bringing a collecting basket with you. We will harvest foods for preparing at the end of the walk, but you might want to consider making a personal collection for wild leaf and flower wine-making at home. Details of how to make a wide array of preparations will be discussed on the walk along with a handout at the end.

Food Foraging – Elderflower Special with Jesper -NEW

This event coincides with the flowering season of our native elder and is a chance to learn about and celebrate the many food and medicinal uses of this delightful plant, as well as being aware of the many other berries and plants growing around you. After an hour or two of foraging, you’ll set up an outdoor cooking space and transform the foraged elderflowers into none other than delicious thirst quenching elderflower cordial and elderflower champagne for you to take home. Recipe sheets will be provided. It promises to be a full and fruitful forage!
Pls bring your own sterilised glass bottle with a flappable cork top.
