| Basic Bread |
Serves: Makes 2 loaves
Ingredients
- 1 lb organic strong white bread flour
- 1 lb organic 100% wholemeal bread flour
- 2 teaspoons salt
- 1 dessert spoon sugar
- 1 dessert spoon dried yeast
- 1 Pint of warm water
Instructions
- Place the mixing bowl in the oven on lowest heat (big earthenware ones better than metal)
- Put the sugar and dried yeast into half the warm water, mix well, and leave to activate in a warm place
- Grease the bread tins
- When the yeast has formed a good ‘head’ on the water, get the bowl out of the oven and put in the flour and salt Mix them together and make a well in the middle
- Pour the yeasted water and the rest of the warm water into the well and leave for about 10 mins (till bowl cools to hand heat)
- Mix the dough thoroughly in the bowl and then turn it out on to a floured surface
- Knead the dough until a soft spongy, elastic texture has been reached (dough should not be sticking to your hands at this point)
- Divide the dough into 2 halves and re-knead them, shaping them and placing in the tins
- Place in a hot oven and cook for 25 mins at 190 degrees
- Take the bread out of the oven and out of bread tins. Check for readiness by tapping bottom of loaf (if should sound slightly hollow
- Place on a wire rack until cooled down
