| Naan bread |
Recipe Type: Bread
Makes 5 or 6 naans
Ingredients
- 1 lb organic strong white bread flour
- 4 tablespoons Olive Oil
- 1 desert spoon Garlic Paste
- 1 teaspoon sugar
- 1 teaspoon dried yeast
- pint of warm water
Instructions
- Place the mixing bowl in the oven on lowest heat (big earthenware ones better than metal)
- Put the sugar and dried yeast into the warm water, mix well, and leave to activate in a warm place
- Make the garlic paste (chop 3 or 4 cloves very finely on a chopping board. Add ½ tspn salt and chop again. Leave the mixture to sweat – approx 30 mins. Crush the mixture to a paste using the flat of a large knife).
- When the yeast has formed a good ‘head’ on the water, get the bowl out of the oven and put in the flour, garlic paste and olive oil. Mix them together and make a well in the middle
- Pour the yeasted water into the well and leave for about 10 mins
- Mix the dough thoroughly in the bowl and then turn it out on to a floured surface
- Knead the dough until a soft spongy, elastic texture has been reached
- Leave the dough to rise – approx 30 mins.
- Put a large frying pan (preferably cast iron) on the hob, add a dessert spoon of sunflower oil and heat up with a moderate flame, until quit hot
- Cut a tennis ball sized piece of dough and with a rolling pin roll out to plate size
- Put the dough in the frying pan and cook for about 4 min per side (the dough will bubble up and show golden brown patches)
- Put in a low oven whilst cooking the next Naan (also delicious if you sprinkle grated cheese on them before you put them in the oven)
