Ingredients
  • For the starter:
  • 4oz strong white plain flour
  • 2 tspns sugar
  • 8 fl oz warm water
  • For the loaf:
  • 1 tspn dried yeast
  • 12 fl oz warm water
  • 1 ½ lbs strong plain white flour
  • 2 tspns salt
  • 2 tspns sugar
  • tspn bicarbonate of soda
Instructions
  1. To make the starter place the starter ingredients in a warm bowl and mix thoroughly.
  2. Cover the bowl and leave for 2-3 days until the mixture begins to bubble and possibly rise
  3. Feed the starter regularly, every other day by discarding half and replenishing the starter with flour and warm water
  4. To make the loaf activate the yeast by mixing the dried yeast, sugar and warm water and leave till a substantial head has appeared on the surface.
  5. Mix the flour, bicarbonate of soda and salt in a pre-warmed ceramic mixing bowl and then add the yeast mixture and the sourdough starter.
  6. Mix to a dough and leave to double in size for about 1-2 hours.
  7. Turn the dough onto a floured board and knead thoroughly.
  8. Divide the dough into two equal halves and shape to your choice.
  9. Place the loaves on a greased baking sheet and leave to double in size.
  10. Bake in a pre-heated oven at 200 degrees gas mark 6 for 30-35 minutes.
