Lemon Sponge Pudding

Ingredients
  • 4 ozs Butter or Margerine
  • 5 ozs Brown Sugar
  • 1 Lemon
  • 1 Egg
  • 4 ozs Wholemeal Self-Raising Flour
Instructions
  1. Grease and line a 7-inch cake tin.
  2. Warm the butter and 4 ozs of the sugar in a bowl.
  3. Grate the rind of the lemon and add to the bowl.
  4. Whisk the egg in a cup and then add to the bowl and whisk the mixture till light and fluffy.Fold in the flour.
  5. Turn the mixture into the cake tin.
  6. Bake in the oven at 180 degrees (gas mark 4) for about 30 mins.
  7. Warm the remaining sugar with the juice of the lemon.
  8. Prick the sponge all over and spoon the syrup over the top.
  9. Serve with single cream or custard.
