| Lemon Sponge Pudding |
Ingredients
- 4 ozs Butter or Margerine
- 5 ozs Brown Sugar
- 1 Lemon
- 1 Egg
- 4 ozs Wholemeal Self-Raising Flour
Instructions
- Grease and line a 7-inch cake tin.
- Warm the butter and 4 ozs of the sugar in a bowl.
- Grate the rind of the lemon and add to the bowl.
- Whisk the egg in a cup and then add to the bowl and whisk the mixture till light and fluffy.Fold in the flour.
- Turn the mixture into the cake tin.
- Bake in the oven at 180 degrees (gas mark 4) for about 30 mins.
- Warm the remaining sugar with the juice of the lemon.
- Prick the sponge all over and spoon the syrup over the top.
- Serve with single cream or custard.
