| Non bake Berry Cheesecake |
Serves: approx. 6 ramekins dishes/small glasses
Ingredients
- 8 Digestive biscuits
- 25g butter
- A pinch of ground ginger
- 250g cream cheese
- 4 tablespoon greek yoghurt
- 4 tablespoon icing sugar
- 300g seasonal berries
- 2 tablespoon caster sugar
- Juice & zest of 1 unwaxed lemon
Instructions
- Crush biscuits with melted butter and ginger and press into bottom of the each glass/dish and put into the fridge to chill.
- Place berries and caster sugar into a saucepan and gently heat for 10 minutes. Remove from heat and allow to cool.
- Fold yoghurt and cream cheese together and sieve the icing sugar into this mix.
- Squeeze over the lemon juice and zest and fold in the berries. Spoon the mixture in to the pots evenly. Chill and serve.
