Non bake Berry Cheesecake

Serves: approx. 6 ramekins dishes/small glasses
Ingredients
  • 8 Digestive biscuits
  • 25g butter
  • A pinch of ground ginger
  • 250g cream cheese
  • 4 tablespoon greek yoghurt
  • 4 tablespoon icing sugar
  • 300g seasonal berries
  • 2 tablespoon caster sugar
  • Juice & zest of 1 unwaxed lemon
Instructions
  1. Crush biscuits with melted butter and ginger and press into bottom of the each glass/dish and put into the fridge to chill.
  2. Place berries and caster sugar into a saucepan and gently heat for 10 minutes. Remove from heat and allow to cool.
  3. Fold yoghurt and cream cheese together and sieve the icing sugar into this mix.
  4. Squeeze over the lemon juice and zest and fold in the berries. Spoon the mixture in to the pots evenly. Chill and serve.
