Warm Fruit Compote with Yoghurt & Granola Topping

Serves: 4-6
Ingredients
  • 2 large bramley or other cooking apples, peeled (or not), cored and cut into chunks
  • 2 cups of fresh or frozen mixed berries
  • a teaspoon of ground cinnamon
  • 10 tablespoons natural yoghurt
  • Cane sugar or fruity syrup such as date syrup to taste
  • 6-8 tablespoons granola of choice, either shop bought or homemade
Instructions
  1. Stew the apples in a non-stick pan over a low to medium heat until they soften but still retain most of their shape – about 5-10 minutes. You may need to add small amounts of water to prevent burning depending on how juicy they are.
  2. Towards the end of the cooking time, tip in the berries and add the cinnamon. If using frozen berries, defrost first and leave a bit less time for them.
  3. Mix thoroughly, heat through and allow to simmer for a couple of minutes to soften but still retain their shape.
  4. Add sugar or syrup to taste – to sweeten but maintain some ‘bite’.
  5. Serve warm topped with a dollop of the yoghurt and topped with a good sprinkling of granola.
Notes

Perfect as an easy pudding and a tasty way towards your ‘5-a-day’ but just as good as a delicious breakfast. Cook up a batch of the fruit and keep in the fridge to use when required – it will keep happily for a few days if properly chilled.
Use whatever fruits are in season to add to your apple base. Rhubarb (with some ground ginger) is great in Spring, plums (with cinnamon) are great in Autumn, citrus fruits (with ginger) are great in Winter and summer is of course the time for berries & cherries, but also peaches & nectarines.
