Basic Fishcakes

Ingredients
  • 1 lb. potatoes
  • 1 tin mackerel
  • 1 tbsp milk
  • 1 tsp butter
  • cup wholemeal flour
  • 2 tbsp sunflower oil
Instructions
  1. Peel potatoes (or not – your choice!)
  2. Boil potatoes 15 – 20 minutes (until soft)
  3. Mash potatoes with butter and milk
  4. Flake the mackerel into the mashed potato and mix thoroughly
  5. Add salt and pepper to taste
  6. Heat the oil in a large frying pan
  7. Shape the fish cakes, coat them in flour and fry them, 4-5 minutes each side over a medium heat
