goes well with this yoghurt dip on the side
| Basic Fishcakes |
Ingredients
- 1 lb. potatoes
- 1 tin mackerel
- 1 tbsp milk
- 1 tsp butter
- cup wholemeal flour
- 2 tbsp sunflower oil
Instructions
- Peel potatoes (or not – your choice!)
- Boil potatoes 15 – 20 minutes (until soft)
- Mash potatoes with butter and milk
- Flake the mackerel into the mashed potato and mix thoroughly
- Add salt and pepper to taste
- Heat the oil in a large frying pan
- Shape the fish cakes, coat them in flour and fry them, 4-5 minutes each side over a medium heat
