| Grilled Herrings with Toasted Almonds |
Ingredients
- 4 Herrings
- 8ozs Flaked Almonds
- Butter
- Watercress
- Lemon
Instructions
- Toast the almonds under a grill making sure not to burn them.
- Clean the herrings and remove the heads.
- Lay the herring on its back and cut down the side of the backbone.
- Flatten the fish and remove as many bones as possible. (The odd tiny hair bone will not cause a problem).
- Smear the flesh side of the fish with butter and grill till cooked and golden brown.
- Sprinkle with the toasted almonds and flash under the grill.
- Serve with a sprig of watercress and a wedge of lemon.
