Grilled Herrings with Toasted Almonds

Ingredients
  • 4 Herrings
  • 8ozs Flaked Almonds
  • Butter
  • Watercress
  • Lemon
Instructions
  1. Toast the almonds under a grill making sure not to burn them.
  2. Clean the herrings and remove the heads.
  3. Lay the herring on its back and cut down the side of the backbone.
  4. Flatten the fish and remove as many bones as possible. (The odd tiny hair bone will not cause a problem).
  5. Smear the flesh side of the fish with butter and grill till cooked and golden brown.
  6. Sprinkle with the toasted almonds and flash under the grill.
  7. Serve with a sprig of watercress and a wedge of lemon.
