Spicy Lamb Kofta

Ingredients
  • 2 tsp cumin seeds
  • 2 tsp coriander seeds
  • 500g minced lamb
  • 1 red chilli, deseeded and finely chopped
  • 2 garlic cloves, peeled and crushed
  • Salt, pepper
  • 1 tbsp olive oil
  • 2 tbsp finely chopped fresh coriander
  • 2 tbsp finely chopped fresh mint
Instructions
  1. Dry fry the spice seeds and toast over heat for about 3 minutes before crushing them with a pestle and mortar.
  2. Add to the lamb in a big bowl with the chilli and garlic. Season with plenty of salt and pepper then mix it all up thoroughly with your hands.
  3. Divide the mixture into 8, roll into balls and then flatten them a little. If you prefer you could make them into tubes and mould them around soaked wooden skewers.
  4. Refrigerate for at least 20 mins before brushing with olive oil and cooking either on a BBQ or on a griddle pan for 3-4 mins on each side.
