| Spicy Lamb Kofta |
Serves: 4
Ingredients
- 2 tsp cumin seeds
- 2 tsp coriander seeds
- 500g minced lamb
- 1 red chilli, deseeded and finely chopped
- 2 garlic cloves, peeled and crushed
- Salt, pepper
- 1 tbsp olive oil
- 2 tbsp finely chopped fresh coriander
- 2 tbsp finely chopped fresh mint
Instructions
- Dry fry the spice seeds and toast over heat for about 3 minutes before crushing them with a pestle and mortar.
- Add to the lamb in a big bowl with the chilli and garlic. Season with plenty of salt and pepper then mix it all up thoroughly with your hands.
- Divide the mixture into 8, roll into balls and then flatten them a little. If you prefer you could make them into tubes and mould them around soaked wooden skewers.
- Refrigerate for at least 20 mins before brushing with olive oil and cooking either on a BBQ or on a griddle pan for 3-4 mins on each side.
