| Baba Ghannouj (Lebanese)- Smoked aubergine & sesame puree |
Serves: 4-6
Ingredients
- 1 medium sized Aubergine
- 60ml (4 tbsp) lemon juice
- 60ml (4 tbsp) tahini
- 2 cloves garlic, peeled and crushed/grated
- tsp ground cumin
- Salt
- 1 tbsp olive oil
- 60g finely chopped flat leaf parsley
Instructions
- Grill the aubergine either on a BBQ, placed directly in the flames of a gas burning hob, or in a very hot oven. Turn often.
- Place in a bowl and cover with cling film. Leave to cool and then peel the skin off.
- Place aubergine flesh in a blender and puree with the lemon juice, garlic, cumin and 1 tsp of salt. Add the tahini gradually and then the olive oil. Finally add the chopped parsley and blend together briefly. Taste before placing in a shallow bowl. You can always add more salt or lemon juice if it needs it.
- Serve as a dip with pitta bread.
