Baba Ghannouj (Lebanese)- Smoked aubergine & sesame puree

Serves: 4-6
Ingredients
  • 1 medium sized Aubergine
  • 60ml (4 tbsp) lemon juice
  • 60ml (4 tbsp) tahini
  • 2 cloves garlic, peeled and crushed/grated
  • tsp ground cumin
  • Salt
  • 1 tbsp olive oil
  • 60g finely chopped flat leaf parsley
Instructions
  1. Grill the aubergine either on a BBQ, placed directly in the flames of a gas burning hob, or in a very hot oven. Turn often.
  2. Place in a bowl and cover with cling film. Leave to cool and then peel the skin off.
  3. Place aubergine flesh in a blender and puree with the lemon juice, garlic, cumin and 1 tsp of salt. Add the tahini gradually and then the olive oil. Finally add the chopped parsley and blend together briefly. Taste before placing in a shallow bowl. You can always add more salt or lemon juice if it needs it.
  4. Serve as a dip with pitta bread.
