| Methi Pakoras |
Serves: 6 people
Ingredients
- 1 bunch of Fenugreek – chopped including the tender part of the stalks.
- 225 gram chick pea flour (Besan/Gram)
- 1 Large onion – sliced
- 2.5 cms ginger – peeled and grated
- bunch fresh coriander – chopped
- 2 green chillies – deseeded and chopped (optional)
- Vegetable oil for deep frying
- 1 ½ tsp baking powder
- 175 mls cold water
- Spices:
- 1 tsp salt
- 1 tsp kala masala
- 2 tsp cumin seeds
- 2 tsp Lovage seeds
- 1 tsp paprika
- tsp red chilli flakes
- tsp garam masala
Instructions
- Chop and wash the fenugreek in running water and drain.
- Sieve the gram flour into a bowl, add the baking powder and spices ,add the water slowly and mix to a smooth stiffish batter.
- Add all the fresh ingredients and add the fenugreek last.
- The fenugreek will thin the batter, so no more water maybe necessary
- Heat the oil to moderately hot and carefully put spoonfuls of mixture into the oil.
- Cook gently for 7 – 8 minutes turning frequently.
- Drain and serve with Yoghurt Mint Sauce/ Mint Chutney.
