Tomato Hoummus

Ingredients
  • 225g dried chick peas, soaked overnight in water, then simmered gently for 2-3 hours, or use one tin of chickpeas)
  • 2 or 3 cloves garlic (to your taste), peeled & crushed
  • 250ml olive oil
  • 150 ml water
  • Juice of 1 lemon
  • 4-6 tbsp tahini
  • 2 tbsp tomato puree
  • 4 sundried tomatoes in oil, chopped
  • 1 tsp salt
  • A pinch of paprika
Instructions
  1. Drain the chick peas and place them in a food processor with the garlic, tomatoes, puree, salt and 3 tbsp tahini.
  2. Pour in half of the olive oil, lemon juice and 2/3 of the water. Blend to a smooth paste adding more water and olive oil until it reaches a consistency you’re happy with.
  3. Taste for seasoning.
  4. If it needs more ‘base notes’ ie ‘something is missing’, add more tahini a tablespoon at a time.
  5. Spoon into a serving dish and sprinkle with some paprika to garnish.
