| Tomato Hoummus |
Ingredients
- 225g dried chick peas, soaked overnight in water, then simmered gently for 2-3 hours, or use one tin of chickpeas)
- 2 or 3 cloves garlic (to your taste), peeled & crushed
- 250ml olive oil
- 150 ml water
- Juice of 1 lemon
- 4-6 tbsp tahini
- 2 tbsp tomato puree
- 4 sundried tomatoes in oil, chopped
- 1 tsp salt
- A pinch of paprika
Instructions
- Drain the chick peas and place them in a food processor with the garlic, tomatoes, puree, salt and 3 tbsp tahini.
- Pour in half of the olive oil, lemon juice and 2/3 of the water. Blend to a smooth paste adding more water and olive oil until it reaches a consistency you’re happy with.
- Taste for seasoning.
- If it needs more ‘base notes’ ie ‘something is missing’, add more tahini a tablespoon at a time.
- Spoon into a serving dish and sprinkle with some paprika to garnish.
