Join the incredible Zosima to explore the fragrant flavours, rich heritage and regional cuisines of Thailand. You will go home with a wealth of skills and understanding, ready to recreate delicious, unusual dishes for your friends and family – you’ll never buy a jar of Thai curry paste again!

You will learn to make the following dishes (vegan and veggie versions available – just let us know when booking): 

  • Som Tam - This spicy green papaya salad combines all the 5 main tastes of Thai cuisine wonderfully – sour lime, hot chilli, saltiness, savoury fish sauce and the sweetness of palm.
  • Satay Gai - Skewers of marinated chicken served with a homemade peanut sauce
  • Massaman Curry - A milder curry found in Southern Thailand, full of fragrant spices. Learn to make your own curry paste for quick midweek meals.
  • Tod Man Khao Pod - A common spicy Thai sweetcorn fritter served by street vendors all over Thailand

During this Thai cookery masterclass,  you will learn how to make a range of classic and more unusual dishes, all using the wonderful aromatic flavours of Thailand.

The country has a rich heritage of regional cuisines to draw from, so you will cook and feast on a range of tastes found across Thailand. You will go home with a wealth of new skills, an understanding of how  the cuisine makes use of spices in  a unique way, and lots of ideas to add excitement to your midweek meal planning. Bring lots of containers as there will be a lot of food to take home!

Zosima has a wealth of experience in teaching all the ins and outs of East and Southeast Asian cooking; from the traditions and culture around the recipes to using alternative ingredients that are more readily available to you in supermarkets and shops near you.

This class is not suitable for people with nut allergies.

My business name Mama Z comes from the fact that I love to look after people through food and having worked in many commercial kitchens over the years, now having my own business selling street food, means I can invest my heritage and passion into my food. Food is love. I really enjoy creating receipes and curating menus using fresh, seasonal ingredients.

I have branched out into retail by bottling and jarring sauces which will soon be available via Cracking Good Food!
